Chicken & Black Bean Burrito

Ingredients

  • 700g chicken fillets, thinly sliced
  • 2 tbs tomato paste
  • 1 tsp each ground coriander, ground cumin, smoked paprika
  • 1/2 tsp taco seasoning
  • 1/3 cup (80ml) extra virgin olive oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 400g can black beans, rinsed, drained
  • 450g packet microwave long grain rice, cooked to packet instructions
  • 2 avocados
  • Juice of 1 lime, plus extra lime halves to serve
  • 2 cups white cabbage, finely shaved (we used a mandoline)
  • 4 large tortillas, warmed
  • 1/2 cup (130g) store-bought tomato salsa
  • Coriander leaves, to serve
  • MOJO VERDE:
  • 1 bunch coriander
  • 1/2 bunch fresh oregano, leaves picked
  • 4 garlic cloves, roughly chopped
  • 1 tsp ground cumin
  • Juice of 1 lemon
  • 1/3 cup (80ml) extra virgin olive oil
