Chicken, Broccoli and Lemon Stir-fry

Ingredients

  • 1 tsp sunflower oil
  • 15 g (½oz) butter
  • 2.5 cm (1in) fresh root ginger, finely sliced
  • 1 garlic clove, finely sliced
  • 250 g (9oz) chicken breast, cut into chunks
  • 1 tbsp light soy sauce
  • Zest and juice of ½ lemon
  • 1 tbsp flaked almonds, toasted
  • 200g Broccoli
