Chicken, Brussels Sprout and Kale Salad

Ingredients
- Salad:
- 1 1/2 cups kale, shredded (1/2 cup serve required)
- 150g precooked boiled chicken breast, chopped
- 1/2 cup Brussel sprouts, shredded
- 1/4 avocado
- Dressing:
- 1 tbsp olive oil
- Pepper, to taste
- 1 tsp mixed herbs
Directions
In a medium bowl start with a bed of kale, then top with brussel sprouts and chicken in lines or toss them on all together.
Top with chopped avocado.
In a separate bowl whisk the dressing ingredients; oil, pepper and herbs.
Pour over salad and toss dressing.
Divide salad between plates, serve.
