Heat 1 tablespoon oil in frying pan over medium high heat.
Cook the chicken until golden brown on each side. Set aside. Add 1 tablespoon oil, onion and garlic to the pan and cook until translucent.
Add the olives, capsicum, rosemary and chopped tomatoes to the pan and cook for 10 minutes. Return the chicken to the pan, reduce heat to low, and simmer until the chicken is cooked through, about 20 minutes. Season to taste.
