Chicken Fajita Kabobs With Cilantro Lime Sauce by Monument Grills

Ingredients

  • 2 Pounds Boneless Chicken Breasts
  • 2 Medium Onions
  • 1 Bell Pepper
  • Monument Grills Texas Beef Rub
  • ¾ Cup Greek Yogurt
  • Zest and Juice of 1 Lime
  • ½ Cup of Cilantro

Directions

  1. Preheat your grill to 400°F.
  2. Cut the chicken breasts into 2 inch wide cubes.
  3. Cut the bell peppers into 2 inch wide pieces.
  4. Cut the onions into fourths.
  5. Assemble the kabobs alternating between pieces of meat and pieces of vegetables.
  6. Cook the kabobs directly on the grill grates, rotate every 3 minutes to make sure all sides get browned.
  7. Meanwhile, use a blender to mix the sauce by blending the greek yogurt, lime zest, lime juice, and cilantro.
  8. Cook until the IT of the chicken reaches 165°F.
  9. Remove from the grill and allow to rest. Use the Cilantro Lime Sauce as a drizzle or dipping sauce.
