Chicken, Hazelnut and Rocket Pasta

Ingredients

  • 200g linguine
  • 240g chicken breast fillets
  • ½ cup (75g) hazelnuts, toasted, chopped coarsely
  • 150g baby rocket leaves
  • 1/3 cup (80ml) lime juice
  • 1/3 cup (80ml) olive oil
  • 2 cloves garlic, crushed
  • 2 teaspoons Dijon mustard

Directions

  1. 1. Cook pasta in a large saucepan of boiling water uncovered, until just tender and drain.
  2. 2. Meanwhile, cook chicken on heated oiled drill plate (or grill or barbeque) until browned all over and cooked through. Stand 5 minutes; cut into thin slices.
  3. 3. Combine pasta and chicken in a large bowl with hazelnuts, rocket and combine remaining ingredients, toss gently to combine.
  4. Serves 4
