Chicken, Kale and Brussels

Ingredients

  • 1/2 tbsp coconut oil
  • 1/2 onion peeled and diced
  • 75g straky bacon - cut into 1cm strips
  • 2 x Chicken breasts
  • 150g brussel sprouts, trimed and shredded
  • 100g kale,s talks removed
  • 50g precooked chestnuts, crumbled
  • 40g mozzarella
  • 1 red chillie, sliced

Directions

Melt oil in pan

add onion and bacon

Fry 2-3 minutes until browned and crisp

Add chicken breast and cook through

Add the brussels and kale and turn up the heat.

Stir fry for 2 minutes and add a spalsh of water

Turn on grill

Take the mix off the heat and scatter with chestnuts.

Cut the mozzarell up into rough pieces and place over food

Place under grill until cheese has melted

Sprinkle over red chilli and serve
