Melt oil in pan
add onion and bacon
Fry 2-3 minutes until browned and crisp
Add chicken breast and cook through
Add the brussels and kale and turn up the heat.
Stir fry for 2 minutes and add a spalsh of water
Turn on grill
Take the mix off the heat and scatter with chestnuts.
Cut the mozzarell up into rough pieces and place over food
Place under grill until cheese has melted
Sprinkle over red chilli and serve
