Chicken Marinated Skewers With Mango Slaw
Ingredients
- 6 boneless, skinless chicken thighs, cut into thick strips
- ½ cup (60 mL) Balkan style plain yogurt
- 3 tbsps (45 mL) lemon juice
- 2 tbsps (30 mL) extra-virgin olive oil
- 2 tsps (10 mL) salt
- 3 cloves garlic, minced
- 1 tsp (5 mL) smoked paprika
- 1 tsp (5 mL) each paprika and ground cumin
- ½ tsp (2 mL) cayenne pepper

- Mango Slaw
- 1 tbsp (15 mL) extra-virgin olive oil
- 2 tbsps (30 mL) lime juice
- 1 tbsp (15 mL) liquid honey
- ½ tsp (2 mL) each salt and pepper
- 1 pkg Compliments Coleslaw
- 2 firm mangoes, peeled and cut into matchsticks
- 1 jalapeno, thinly sliced
- 1 cup cilantro leaves with tender stems
Directions
1. Combine chicken, yogurt, lemon juice, oil, salt, garlic, smoked paprika, paprika, ground cumin and cayenne pepper in a bowl. Cover and refrigerate for 3 hours. Meanwhile, soak 10 wood skewers in water for 20 minutes in a shallow bowl.
2. Thread chicken on skewers, discarding yogurt mixture. Cook chicken on grill preheated to medium-high heat until cooked through, flipping, 8 to 10 minutes.
3. Slaw: Whisk oil, lime juice, honey, salt and pepper in a large bowl. Add coleslaw, mango, and jalapeno until combined. Arrange on large platter, top with cilantro and chicken skewers.
Note: Makes 8 to 10 skewers.
