2.Put 2 tbs olive oil in pan and sauté onions on medium heat, until translucent and lightly brown . Lightly salt onions to bring out the flavor..
3. Take chicken and tenderize by pounding to desired thinness. I use plastic wrap and put chicken breast in the middle before pounding.
4. Season chicken breasts with salt, pepper, garlic seasoning ( I used Lazy Janes basil mix and garlic mix.
5. Take some flour and put about 3-4 tablespoons on a plate. Season with salt and pepper.
6. Dip chicken breasts on both sides to coat the chicken.
7. When onions look lightly browned and translucent place dipped chicken breast on top of the onions and cook at a med heat for about 5 min. Turn and cook the other side. When it is almost finished add about a half cup of white wine and continue cooking until almost absorbed. Turn the chicken again and take a whole lemon sliced in half.. Remove seeds and squeeze over all of the chicken and simmer on low for. Few minutes. Turn off heat and ready to serve. You can keep warm in the oven on low for a short time if need be.
8. I serve with some kind of light pasta,orzo or risotto .
Some people serve with capers sautéed into the lemon and onions.
