Chicken Salad Roll

Ingredients

  • 1 Wholemeal roll
  • Light margarine
  • 80g Shredded Chicken
  • 1 cup dressed green salad leaves
  • 1/2 Cucumber, peeled & shredded
  • 2 tbsp Red Onion, finely chopped
  • Pinch of Salt & Pepper
  • 1 tbsp Mayonnaise

Directions

  1. Lay roll flat top with margarine and mayonnaise
  2. Add shredded chicken in a can or fresh
  3. Add salad leaves with cucumber, tomato & carrot
  4. OR FRESH
  5. Preheat oven to 425F. This step is optional if you want toasted buns
  6. On a parchment lined oven tray, place the bottom side of the buns on one side and the top side of the buns on the other side, cut side up. Bake for 4-5 minutes
  7. While the buns are toasting, mix all other ingredients in a small bowl.
  8. Carefully take the buns out of the oven and transfer bottom side of the buns to a cutting board
  9. Add lettuce to the bottom part of the buns
  10. Add the chicken salad mix on top, then complete the rolls with the top half
