Chicken Thighs: Pad Thai

Ingredients

  • 1 pound boneless skinless chicken thighs or breasts cut into 1/2 inch pieces
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic minced
  • salt and pepper to taste
  • 2 eggs
  • 8 ounces rice noodles
  • 1 cup bean sprouts
  • ¼ cup green onions cut into 1 inch pieces
  • ¼ cup cilantro leaves
  • ¼ cup roasted salted peanuts chopped
  • 4 lime wedge
  • PAD THAI SAUCE:
  • 2 tablespoons fish sauce
  • 2 tablespoons tamarind paste or Worcestershire
  • 1 tablespoon lime juice
  • 1 tablespoon rice vinegar
  • 4 tablespoons sugar 
  • 1 tablespoon sriracha (optional)
