Chickpea & Mixed Salad

Ingredients
- 1/2 cup canned chickpeas drained and rinsed (for 1 serve use only 1 cup)
- Feta Cheese, chopped
- 1/2 cup mixed salad
- 1/2 cup canned beets, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Spring Onions, thinly sliced
- 1/4 cup bell pepper combo, thinly sliced
- 95g shredded chicken in a can
- 1/2 cucumber, sliced
- 2 tbs balsamic dressing
- Dash of sea salt
- Dash of black pepper
- 1/2 avocado cut into chunks
Directions
In a small bowl, mix the chickpeas with the olive oil, garlic, salt and pepper, adjust the seasonings to taste, and set aside.
In a serving bowl, add the lettuce, chickpeas, tomato, cucumber, avocado, spring onion and feta cheese.
Drizzle with more lemon flavored olive oil and season with more salt and pepper and coriander and enjoy.
