Chili Cheese Rice Bake

Ingredients

  • 2 cups rice, cooked
  • 1 cup green onions, chopped
  • 2 Tbsps butter
  • 1 cup sour cream
  • 1 can chopped green chilies
  • 1 cup small curd cottage cheese
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 3/4 lb. sharp Cheddar cheese, shredded

Directions

  1. Cook rice as directed. Combine all ingredients and 1/4 of the cheese. Pour into large greased casserole. Top with remaining cheese. Bake at 350 degrees for 30 minutes.
