Chinese Chicken & Corn

Ingredients

  • 1 litre chicken stock
  • 2 Tbsp minced ginger
  • 2 cups shredded BBQ chook
  • 1 can (400g) creamed corn
  • 1 can corn kernels (or fresh off the cob)
  • 3 x spring onion stems (sliced)
  • 2 Tbsp sesame oil
  • 1 x egg
  • Salt and pepper to taste

Directions

Method:

  1. Throw stock and ginger in pot and bring to the boil. Add chicken, corn, spring onion and oil. Simmer for 2 or 3 minutes. Meanwhile, in a small jug whisk egg and slowly pour into soup whilst stirring. Season and serve with a little extra spring onion and some crusty bread.
  2. Very basic, very nice. Enjoy!
