Chocolate-Berry Pudding

Ingredients

  • 1 cup frozen strawberries
  • 2 dates, pitted
  • 1 can full-fat coconut milk
  • 2 scoops Gelatin
  • 2 scoops The Myers Way® Double Chocolate
  • Paleo Protein
  • Pinch of sea salt
  • 1⁄2 tsp vanilla extract

Directions

Step One: Preheat a small pan on the stovetop over
medium heat. Before pan is warm, add coconut
milk and gelatin and whisk well to combine until
gelatin thickens. Remove pan from heat and add
dates and allow to steep for about 3 minutes to
soften dates.

Step Two: Pour all the ingredients into a blender
and blend till smooth. Transfer mixture into two
small ramekins and chill in fridge for about 4
hours, until set. Serve cold.
