Chocolate Crackle Bliss Balls

Ingredients
- 1/2 cup (40g) desiccated coconut
- 2 tbsp cocoa powder
- 1/2 cup (115g) finely chopped pitted medjool dates
- 2 cups (80g) gluten free rice puffs cereal
- 2 tsps vanilla essence
- 2 tbsps chia seeds
- 1/2 cup (120g) natural smooth peanut butter
- 1/4 cup (60ml) pure maple syrup
Directions
Combine coconut, cocoa and 1 tsp salt in a large bowl. Add dates and toss to evenly coat. Add remaining ingredients and mix until well combined.
Using damp hands, roll mixture into 25 balls. Place on a tray, cover and refrigerate for 1 hour or until firm.
