Here's the recipe for the dark chocolate cupcakes :)
3/4 cup+ 2 tbsp flour
3/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp instant coffee powder
1/2 cup cocoa
1 n 1/4 cup sugar
1/2 cup buttermilk
1/4 cup vegetable oil
1 egg
2 tsp vanilla essence
A little more than 1/2 cup hot water
This is a one bowl recipe which doesn't require to be beaten,just mixed well with a spatula. I always bake my cakes at 150..it takes longer but works for me..go according to what your ovens demand :)
Preheat your oven.
First sieve together all the dry ingredients into a mixing bowl. Then take all your wet ingredients in another bowl.be sure to mix well when you pour the hot water or you could scramble your egg :( mix the dry with the wet well.
Line your cupcake pan with liners and scoop in equal measures of batter.fill somewhere between 1/2 n 3/4 .bake until skewer comes out clean. Decorate only once the cupcakes have completely cooled down :)
For the ganache I used a ratio of 2:1 ...I played around with the chocolate(eyeballed it) but took exactly 1 cup of cream.i first heated the cream and then poured it into the broken chocolate.do not stir.let it stay for a bit and then slowly keep stirring until all of the chocolate has been melted and you get a smooth,glossy saucy mixture.i just kept it out at room temp and was able to pipe within an hour.
