Chocolate Mug Cake

Ingredients

  • 2 large eggs
  • 1/4 cup unsalted butter
  • 1/3 cup ground almonds
  • 1/4 cup cocoa powder
  • 1/4 cup sweetener
  • 1/4 cup dark chocolate
  • 1 tsp almond extract
  • 1 tsp vanilla extract

Directions

  1. Melt the butter in the microwave for 15-25 seconds.
  2. Add the ground almonds, cocoa powder and sweetener to the melted butter.
  3. Add in the eggs and mix until fully combined. If the batter seems a little dry, add 1-2 tbsp of double cream until it's the right consistency.
  4. Divide between two ramekins and push small pieces of chocolate into the batter.
  5. Microwave each ramekin for 60-90 seconds.
