Chocolate Protein Cookie Dough Balls (Fudgy Version)

Ingredients

  • • 1 cup almond flour plus more to combine
  • • 3 Tbsp (30 g) vanilla protein powder
  • • 2 Tbsp cacao powder
  • • 2 Tbsp coconut oil, organic refined, melted (28g)
  • • 1 Tbsp almond butter
  • • 2 Tbsp maple syrup
  • • 1 tsp pure vanilla extract
  • • 3 Tbsp almond milk
  • • 1/8–1/4 tsp fine sea salt (to taste)
  • • 1/2 cup mini chocolate chips or chopped dark chocolate

Directions

  1. 1. In a medium bowl, whisk together the almond flour, protein powder, cacao powder, and salt.
  2. 2. Stir in the maple syrup, coconut oil, almond butter, vanilla extract, and 3 Tbsp almond milk. Mix until a fudgy dough forms. If too dry, add a little more almond milk, one teaspoon at a time.
  3. 3. Fold in the chocolate chips.
  4. 4. Roll into bite-sized balls and chill for 20–30 minutes before serving.
