Chocolate Truffle Torte

Ingredients

  • 1/2 cup dark (85-90%) chocolate
  • 1/2 cup unsalted butter
  • 1/2 cup sweetener
  • 2/3 cup double cream
  • 3 eggs
  • 1 tbsp cocoa powder
  • 1 tsp almond extract

Directions

  1. Pre-heat the oven to gas mark 5/375f.
  2. Melt the chocolate and butter together over a low heat.
  3. In a large bowl, mix together the cream, eggs, sweetener, cocoa powder and almond extract.
  4. Slowly pour the chocolate and butter into the cream and eggs, whisking quickly until it's all combined.
  5. Pour the mixture into a greased non-stick cake pan and bake for 25-30 minutes.
