Chunky Chicken Or Halibut Chili

Ingredients

  • 1.5 lbs boneless skinless chicken breast or Halibut filets
  • 5tbsp olive oil
  • 2 chopped onion
  • 4 garlic cloves
  • 1tsp ground cumin
  • 1 tsp cayenne
  • 1 tsp dried oregano
  • 1 tsp salt
  • 2 fresh or canned jalapeño
  • 2 c chicken or veggie broth
  • 1 can cannelloni or white kidney beans, rinsed
  • 2 cups frozen corn
  • 2 cups white cheddar
  • Salsa
  • Sour cream
  • Cilantro

Directions

  1. Heat oven to 350
  2. Cut chicken into smallish pieces - heat oil - add chicken - cook until almost done, then put in another dish
  3. Or
  4. Drizzle Halibut with oil, place skin side down on non stock baking tray - bake for 12 to 15 mins at 400* F
  5. Add oil to pot - cook onion, garlic, cumin, cayenne for 5 mins
  6. Add oregano, salt, jalapeños, chicken (if using) broth, corn, beans.
  7. Cover and bake for 30 - 45 mins
  8. If using Halibut, add just before serving
  9. Garnish with cheese, sour cream, salsa, cilantro
