Citrus Chicken with Chickpea Salad

Ingredients

  • 4 single chicken breast fillets, halved
  • 1 tablespoon lemon rind, finely grated
  • 1 tablespoon lime rind, finely grated
  • 300g can chickpeas, rinsed and drained
  • 1 medium red onion, chopped finely
  • 4 medium red tomatoes, chopped coarsely
  • 1 tablespoon coriander leaves, chopped finely
  • 1 medium avocado, chopped finely
  • 1 tablespoon lemon juice

Directions

  1. Combine chicken, lemon and lime rind in a medium bowl. Cover and refrigerate for at least 3 hours or until required.
  2. Combine chickpeas, onion, tomato, coriander, avocado and lemon juice in a medium bowl and mix well.
  3. Cook chicken on a heated oiled griddle (or grill or barbecue) until chicken is browned on both sides and cooked through.
  4. Spoon chickpea salad into serving bowls and top with warm chicken.
  5. I sometimes add rocket or spinach to the salad (optional).
