Classic Chicken Curry

Ingredients

  • CURRY POWDER BASE
  • 3 tbsp mild curry powder
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tbsp ground cinnamon
  • 1 tbsp paprika
  • 1/2 tbsp crushed cardamom seeds
  • 1/4 tbsp ground cloves
  • 1/4 tbsp turmeric
  • SAUCE
  • Chicken, cut into large pieces
  • 1 onion, peeled and finely chopped
  • 2 tsp peeled and finely grated ginger
  • 2 tsp peeled and crushed garlic
  • 400g can chopped tomatoes
  • 1/2 pt chicken stock

Directions

  1. Mix ingredients for the base
  2. Save 1/3 to add to the sauce. Save and label 2/3 for another time
  3. Place a frying pan over a medium heat. Add the onion and stir fry for 5-6 minutes or until starting to lightly brown.
  4. Stir in the dry mix, ginger, garlic and stir fry over a high heat for 1-2 minutes.
  5. Add the chicken and cook for 2-3 minutes until sealed, then add the tomatoes and stock.
  6. Bring to the boil, cover tightly, reduce the heat to low and allow to simmer gently for 40-45 minutes, stirring occasionally until the chicken is cooked through.
