Cockles Spain Style

Ingredients

  • Bag of cockles
  • White wine
  • Saffron
  • Chilli
  • Garlic
  • Shallots
  • Olive oil

Directions

  1. Wash the cockles and discard any open/ broken ones
  2. Heat 100ml white wine. Once hot add saffron and leave to infuse
  3. Finely mince 4 garlic cloves and 3 shallots
  4. Heat sauce pan and add olive oil. Once hot add garlic and shallot. Fry for 2 mins. Add chopped chilli
  5. Add the white wine, season and add chopped parsley. Mix well.
  6. Add cocked and mix in. Cover
  7. Cook for 5 mins stirring occasionally
  8. Cockles should be opened when ready
