Coconut Chia Overnight Oats

Ingredients

  • 1/3 cup (30g) rolled oats
  • 1 tbsp (15g) chia seeds
  • 70g 99% fat-free plain greek yoghurt
  • 1/2 cup (125ml) unsweetened almond milk
  • 1/2 tsp vanilla bean paste
  • 2 medjool dates, pitted and finely chopped
  • 1/2 tsp shredded coconut, plus 1/2 tsp extra to serve
  • 60g blueberries, to serve

Directions

  1. Mix oats, chia seeds, yoghurt, milk, vanilla, dates and coconut in a glass jar until well combined. Seal with lid and refrigerate overnight.
  2. Top with berries and extra coconut to serve.

TO REFRIGERATE:

  1. Store for up to 3 days. Top with blueberries and extra coconut just before serving.
