Coconut Pecan Filling

Ingredients

  • 1/3 cup sugar
  • 1/3 cup heavy whipping cream
  • 3 TBSP butter
  • 1 egg, beaten
  • 1/2 cup flaked coconut
  • 1/3 cup chopped pecans
  • 1/2 tsp vanilla

Directions

  1. Stir together sugar, whipping cream, butter, and eggs in a saucepan. Cook over medium heat for about 10 minutes, stirring constantly, until thick and just starts to boil. Stir in coconut, pecans, and vanilla. Cool to room temperature.
