  • 2 large eggs, lightly beaten
  • 3 tablespoons unsalted butter, melted and cooled
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon coconut extract
  • 3/4 cup sweetened shredded coconut, toasted, divided
  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, cut into 8 pieces
  • 1 cup powdered sugar
  • 4 tablespoons unsalted butter, softened
  • 1/4 teaspoon coconut extract
  • 1/8 teaspoon table salt
