Cod: Lemon Garlic Butter

Ingredients

  • For the Cod:
  • 1 pound cod fillets, cut into 4 pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • For the Butter Sauce:
  • 3 tablespoons unsalted butter
  • 1 tablespoon garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

  1. Preheat your oven to 400°F (200°C).
  2. heat olive oil in a large skillet over medium heat.
  3. Season the cod fillets with salt, oregano, and a bit of lemon juice.
  4. Add the cod fillets to the pan and cook for about 3-4 minutes on each side, until golden brown and cooked through.
  5. Remove the cod from the pan and set aside.
  6. In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
  7. Stir in the lemon juice and parsley, and let the sauce simmer for another 1-2 minutes.
  8. Place a piece of cod on top of the sprouts.
  9. Drizzle the lemon garlic butter sauce over the cod and Brussels sprouts.
