Corn Beef and Cabbage

Ingredients

  • Corn Beef ROUND
  • 2 cups water (chicken or beef broth is a good alternate)
  • Seasoning of choice
  • 5+ small potatoes
  • 1 lb. carrots
  • Mushrooms if you like.

Directions

  1. Pour 2 cups water or chicken broth into pressure cooker with cooking rack. Rub seasoning over whole beef round, place corn beef on cooking rack. Set pressure cooker according to directions and available settings. Ater about 50 minutes let the pressure cooker pressure drop. Open cover when pressure is aero. Add small potatoes, 3 carrots cut into 1 inch pieces and cabbage cut into wedges. Do not fill cooker pot over 2/3 full. If potatoes and carrots are to much the cook them separate. Cook another 5 to 10 minutes in pressure cooker.
  2. Serve cabbage with butter and salt and pepper. Slice only the amount of meat that you will be consuming at the meal. If you cut the whole round it will dry out.
