  • Andouille
  • Poblano pepper
  • Baby potatoes
  • Onion
  • Sweet and hot paprika
  • Bag or can of frozen corn
  • 4 cups chicken broth
  • Sauv blanc

Directions

  1. Corn Chowder
  2. Brown andouille
  3. Chop up poblano pepper (1) and onion (1)
  4. Add sweet Paprika
  5. Take slotted spoon and grab everything in there and set aside
  6. Then add diced potatoes (Yukon golds. No peel)
  7. Add oil and salt
  8. Medium heat. Just to brown but not really
  9. Crisp
  10. Deglaze the pan with Sauv blanc
  11. Then throw in frozen corn (full bag)
  12. Add 3 cups of chicken broth
  13. Turn to simmer until potatoes are tender not falling apart
  14. Summer about 15-17 minutes
  15. Turn it off
  16. Let it cool
  17. Take half and put in blender (potatoes, corn stock)
  18. Then put back in pan
  19. With the bowl goods
  20. And then let it heat baby
