Corned Beef

Ingredients

  • 2 X large corned beef (silverside) X each about 1.5kg
  • 1/2c brown vinegar
  • 1/2c brown sugar
  • Tbs back peppercorns
  • 2-3 bay leaves
  • 1 lge carrot cut into chunks
  • 1 brown onion cut into quarters

Directions

  1. 1. Into a large boiler add some cold water (so meat doesn’t stick to the bottom of the pot) and all the other ingredients. Add more cold water to cover the meat.
  2. 2. With lid on, bring to the boil.
  3. 3. Reduce to a simmer and cook for 2 hours.
  4. 4. Cool in the pot (unless eating it hot as a meal.)
  5. 5. Place on a plate with paper towel in the fridge, uncovered, overnight.
  6. 6. Next morning wrap in paper towel and foil (and cling wrap if going in the freezer).
