In a fry pan saute onion and garlic in olive oil. In a sauce pan heat water, olive oil, and salt to a boil. When water boils add couscous, remove from heat, and cover with lid. In saute pan add spinach, pine nuts, and raisins. When spinach is wilted and pine nuts are toasted, combine with couscous and serve. Can substitute polenta for gluten free dish
