Cranberry Couscous Salad

Ingredients

  • 1 cup couscous
  • 1.5 cups water
  • 3 courgettes, sliced
  • Button mushrooms, sliced
  • Handful dried cranberries
  • Olive oil
  • Lemon juice and rind
  • Salt
  • Cashews (optional)

Directions

  1. Combine couscous and boiling water in bowl. Allow couscous to absorb the water.
  2. Fry courgette, mushrooms and cranberries in a generous amount of olive oil.
  3. Add salt (quite a bit), lemon juice and grated rind to couscous when water is fully absorbed.
  4. Add fried ingredients.
  5. Add a little more oil or extra lemon juice if dry.
