Cream of Potato Soup

Ingredients

  • 5 large potatoes
  • 1/2 cup sliced carrots
  • 6 slices bacon (cooked) OR 1/2 lb. ham
  • 1 cup chopped onion
  • 1 cup sliced celery
  • 1-1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 cups milk
  • 2 cups light cream or evaporated milk
  • Cheddar cheese (shredded)
  • Parsley

Directions

  1. Wash, peel and slice potatoes. Cook with carrots in boiling water to cover until tender. Drain
  2. Sautè bacon until crisp. Drain on paper towel and crumble.
  3. Sautè onion and celery in 2 Tbsp. of oil or bacon fat.
  4. Combine all ingredients except cheese and parsley.
  5. Simmer for 30 minutes. DO NOT BOIL as milk will curdle.
  6. Garnish with cheese and parsley to taste.
