Creamy Chicken & Rice Soup

Ingredients

  • 1.5 lbs chicken
  • 2 tbs avocado oil
  • 1 onion, diced
  • 4 celery stalks, diced
  • 3 carrots, peeled & diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 tsp. oregano
  • 1/2 tsp. pepper
  • salt to taste
  • 1 cup uncooked rice
  • 4 cups vegetable or chicken stock
  • 2 cups water
  • 2 cups unsweetened almond milk
  • 1/4 cup almond flour

Directions

  1. 1.) In a large pot, add the chicken, oil, onion, celery, carrots, garlic & seasonings.
  2. 2.) Cook over medium/high heat for 8-10 minutes or until the chicken is cooked.
  3. 3.) Add the broth/stock & water. Then bring it a boil.
  4. 4.) Add the rice & simmer for about 30-40 minutes or until rice is cooked.
  5. 5.) Mix in the milk & flour well so it is evenly combined into the soup.
