Creamy Mashed Potato Casserole

Ingredients

  • 6 potatoes cubed and cooked until fork tender
  • 1/4 cup milk
  • 1 package (8 oz) cream cheese
  • 1 cup sour cream
  • 1 tsp parsley flakes
  • 1 tsp crushed garlic
  • 1/2 cup shredded cheddar cheese

Directions

  1. Preheat oven to 325.
  2. Boil potatoes until fork tender and drain.
  3. Place all ingredients into a mixing bowl except the cheddar cheese.
  4. With an electric mixer blend until smooth.
  5. Spoon into a greased 12 x 8 baking dish.
  6. Cover and bake for 30-40 minutes.
  7. Uncover and sprinkle with cheese. Bake for 5-10 minutes or until cheese is melted.
