Ingredients

  • 4 cups chicken broth
  • 1 can (14 oz) full-fat coconut milk
  • 1 tbsp vegetable oil
  • 4 garlic cloves, minced
  • 1 tsp ginger, minced
  • 3 tbsp Thai red curry paste
  • 1 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp low-sodium soy sauce
  • 1 tsp brown sugar
  • 1 tsp toasted sesame oil
  • 20 frozen gyozas or potstickers
  • 1/4 cup chopped chives or cilantro (for garnish)

Directions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add garlic and ginger. Cook 1โ€“2 minutes until fragrant (but not browned).

Add Broth & Coconut Milk:

  1. Pour in chicken broth and coconut milk. Stir gently. Bring to a simmer.

Season the Broth:

  1. Stir in curry paste, fish sauce, lime juice, soy sauce, sugar, and sesame oil.
  2. Simmer for 5 minutes to blend flavors.

Cook Dumplings:

  1. Add frozen dumplings to the pot. Cook 5โ€“7 minutes, or until tender and floating.

Serve:

  1. Ladle soup into bowls. Top with chives or cilantro.
  2. Optional: add lime wedges or chili oil for extra kick.
