Creamy Tomato Basil Tortellini Soup

Ingredients

  • 1-1/2 chopped onions
  • 3 shredded carrots
  • 1 stick of salted butter
  • 1 quart chicken stock
  • 2 quarts stewed tomatoes
  • 4 chicken bouillon cubes
  • 1 (8 oz.) package cream cheese
  • Red pepper flakes
  • 20 fresh basil leaves torn into pieces or cut into strips
  • 1 pint heavy cream
  • Salt, pepper, and cayenne tortellini
  • Shredded Parmesan cheese

Directions

  1. Sautée onions and carrots in butter until onions are translucent.
  2. Add stock, tomatoes, bouillon, cream cheese and red pepper flakes. Cook until onions are completely done.
  3. Use an emersion blender to cream everything together and smooth lumps from cream cheese.
  4. Add basil leaves, cream and seasonings and simmer on low heat until a little bit thickened.
  5. Add tortellini and cook until tortellini is done.
  6. Garnish with shredded Parmesan cheese.
