Crispy Potato Salad

Ingredients

  • 500-700g potato triplets (whole tray)
  • some olive oil
  • Salt
  • pepper
  • paprika
  • 1/2 fresh cucumber
  • 1/2 pepper
  • 1 red onion
  • some dill or parsley
  • Dressing:
  • approx. 4-5 tbsp yoghurt
  • 2 tosp mayo
  • 1 tosp mustard
  • 1/2 lemon juice
  • Salt pepper

Directions

Boil the potatoes, then put them on the tray and mash them. Add some olive oil and spices and bake at 180 degrees for about 20 minutes.
Meanwhile, chop the vegetables into small pieces. Mix all the ingredients for the dressing and add the vegetables. Add the baked potatoes and enjoy the salad immediately.
