Crock Pot Chicken Tortilla Soup

Ingredients

  • 4 boneless, skinless chicken breasts
  • Two 10-oz cans Red Gold diced tomatoes and chilies with lime juice and cilantro
  • 4-oz can chopped green chilies
  • 15.5-oz can Red Gold tomato sauce
  • 1 cup Red Gold salsa
  • Garnish: sour cream, shredded cheese, tortilla chips

Directions

  1. Put chicken in crock pot.
  2. Add your chilies and Red Gold tomatoes to the crock pot (juice and all).
  3. Add beans (drained and rinsed), tomato sauce and salsa on top.
  4. Cover and cook on low for approximately 8 hours.
  5. During the last two hours, remove chicken and shred with forks, return to crock pot.
