Crockpot Caribbean Chicken Low Calorie

Ingredients

  • 40 oz Skinless boneless chicken (breasts or thighs)
  • 1 can coconut milk
  • 4 cloves garlic or 3 tablespoons minced garlic
  • 1 large white onion
  • 2-3 scotch bonnet peppers diced NO SEEDS
  • 2 whole sweet potatoes (optional)
  • Salt
  • Olive oil
  • 16 oz Riced Cauliflower
  • 16 oz Riced Broccoli
  • Fresh Arugula
  • Baby Spinach
  • Fresh Cilantro
  • 1 tomato diced
  • 1 lemon cut into wedges
  • Hot Sauce (optional)

Directions

  1. Put Chicken, garlic, onions, peppers, salt, sweet potatoes and coconut milk in crockpot. Cook approx 4 hrs
  2. Once chicken is done. Combine Riced Cauliflower, Riced Broccoli, Salt and olive oil in pan. Sautéed until heated through (approx 5-8 minutes)
  3. Serving: Place a handful of Arugula & Baby Spinach on a plate. Add heaping scoop of Riced Cauliflower & Riced Broccoli on top. Pile chicken & sauce from the crockpot on top. Garnish with a generous amount of fresh cilantro & diced tomato. Serve with a lemon wedge & hot sauce to be added on top. Enjoy!!!
