Crumbed Pork with Lemon & Thyme

Ingredients

  • 600g pork leg schnitzel
  • 2 & 1/2 cups bread crumb
  • 1 Tbsp fresh thyme, roughly chopped
  • 1 Tbsp lemon zest
  • 2 Tbsp fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1/3 cup parmesan cheese, grated
  • 1 x egg
  • 1 cup plain flour
  • Vegetable oil for frying
  • Salt and cracked black pepper

Directions

  1. Get your bowls ready. 1 bowl for your flour- Crack some black pepper and salt and mix with flour.
  2. Crack an egg, add a little water and whisk in your 2nd bowl.
  3. 3rd bowl is your crumb mix- bread crumb, thyme, parsley, garlic, parmesan and lemon zest.
  4. Coat your pork in flour, dip in egg wash and gently coat in bread mix. Shallow fry in oil in a non stick pan on medium heat until golden brown on both sides.
  5. Drain on paper towel before serving with a nice salad and fresh squeezed lemon juice.
  6. If pork that you buy is too thick, bash it out with a meat tenderiser. Enjoy!!
