Cucumber Salad With Mint

Ingredients

  • 2 long cucumbers
  • 1 t salt
  • 1/4c chopped red onions
  • 1/4c white vinegar
  • 2T olive oil
  • 2T vegetable oil
  • 2 and 1/2 t sugar
  • 1/4t ground black pepper
  • 1/2 bunch chopped fresh mint

Directions

  1. Cut cucumbers in half lengthwise, run a teaspoon down to remove the seeds. Cut into thin slices and place in a colander sprinkled with the salt. Let it drain in the sink for 1/2 an hour.
  2. Placed chopped onion in cold water for 10 min. Drain in a fine mesh strainer and blot with paper towel.
  3. Tip the colander onto the sink to remove excess water and then lay the cucumbers on a clean tea towel and blot dry.
  4. In a medium bowl add the cucumbers, onion and other ingredients. Mix well, cover and stand in the fridge for at least 1/2 an hour or up to 12 hours.
  5. Serve cold.
