Cucumbers and onions in sour cream

Ingredients

  • 1 large cucumber
  • 2 green onion stalks
  • 1 tspn. salt
  • 2 tblspn sugar
  • 1/4 cup sour cream
  • 1 tblspn. vinegar (red wine or balsamic)
  • white pepper

Directions

  1. Peel and slice cucumber in thin slices.
  2. Chop the green onion, including the tops. Mix with the cucumber.
  3. Sprinkle the salt and sugar over all and toss lightly with a fork to distribute sugar and salt evenly over the cucumber slices.
  4. Let stand 15 or 20 minutes.
  5. Drain thoroughly, pressing cucumber to extract as much moisture as possible. Stir the vinegar into the sour cream.
  6. Add a dash of white pepper.
  7. Pour over cucumber and onion.
  8. Refrigerate until ready to serve. The longer in refrigerator the better.
