Ingredients

  • 1 md. eggplant, with skin, cut into 1/4-inch pieces
  • 1 lg. onion, cut into 1/4-inch pieces
  • 2 cups diced celery
  • 2 tbsp. tomato paste
  • 2 lg. tomatoes, peeled, seeded, and diced
  • 1/3 cup red wine vinegar
  • 1-1/2 tsp. sugar
  • 1 cup water
  • Salt and freshly ground pepper
  • 1 tbsp. drained capers
  • 1/4 cup each of green and black olives, pitted
  • 2 tbsp. pine nuts
