Ingredients

  • 1 cup boiling water
  • 1 cup chopped dates
  • 1/2 cup sultanas
  • 60g butter
  • 3/4 cup brown sugar
  • 2 cups SR Flour
  • 1t Bi-carb sofa
  • 1t cinnamon
  • 1/2t nutmeg
  • 1/4t powdered ginger
  • 1/2 cup chopped pecans

Directions

  1. *Turn oven to 180 degrees
  2. In a large bowl, pour the boiling water overdates, sultanas, butter and sugar. Stir until butter melts. Allow to cool.
  3. Mix soda, spices and flours together. Add to fruit.
  4. Add nuts.
  5. Put mixture in a lined loaf tin.
  6. * Turn oven down to 159 degrees and bake for 1h.
  7. Cool in tin
  8. Best made a day before needed.
