Cut each apple quarter into thirds. Combine with zest, juice, 1/2 cup sugar, flour, salt, and spices. Fill shell with apple mixture. Brush edge with egg wash. Top with 2nd crust. Tuck edges under and crimp. Brush with egg wash and sprinkle with sugar. Cut 4-5 slits and place on cookie sheet. Bake 1 to 1 1/4 hour.
