Heat oil in a deep pot to 350F
Pat fish dry.
Season lightly with salt and pepper
Coat lightly with 2 tablespoons flour.
Mix the rest of the ingredients to make a batter
When oil reaches 350F, Dip fish in the batter.
Carefully lower each fillet into the hot oil.
Fry for approximately 8 minutes, or until the batter is crisp and golden, turning the fillets from time to time with a large slotted spoon.
