Ingredients

  • 4 slices thick bacon
  • 4 cups raw potato, diced
  • Salt & pepper to taste
  • 1 cup sauerkraut
  • 1 cup plain yogurt
  • 1 cup sour cream
  • juice of one lemon
  • Green onion tops, diced

Directions

  1. Fry bacon until crisp. Dice. Set aside in a mixing bowl.
  2. Place diced potatoes in frypan. Cook on low heat until tender, turning over occasionally.
  3. Place in mixing bowl. Add sauerkraut, yogurt, sour cream, and lemon juice.
  4. Mix well and season with salt and pepper to taste.
  5. Sprinkle with green onion tops
