Dill Pickle Chicken Waldorf Salad

Ingredients

  • 2 tsp fresh dill - chopped
  • ¾ cup avocado oil based mayonnaise
  • ¼ tsp celery seed powder
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 3 tsp LiveBrine: Kosher Dill Pickle Brine *you can also use brine from pickle pouch

  • 2 cups shredded cooked chicken *any leftover pulled chicken that’s cooled works great / or about 2 cups of canned chicken
  • 1 large stalk celery - diced
  • ½ cup onion *red or sweet onions work well
  • 1 apple - chopped, core & seeds removed
  • 1 carrot - peeled and shredded
  • salt and pepper to taste *please taste, we replace salt with the brine, you may not need additional salt.

Directions

  1. First, combine all seasonings and mayonnaise ingredients except to make your dressing including your LiveBrine: Kosher Dill Pickle Juice.
  2. Chop and dice all your add in’s.
  3. Combine and refrigerate between 1 hour - overnight for best flavor. Great with Simple Mills grain free crackers.
